Meyer Lemons were never really popular to cook with until nearly the end of the last century, when they experienced a resurgence of use by notable chef Alice Waters. We’re obviously grateful for narrowly avoiding a life sans meyer lemon, and we're even happier with Just Jan's application. We want to dunk a spoon in the smooth, sweet, bold yellow cream. It’s a perfect balance of tart and sweet, and we’re dying to dollop some into a batch of lemon bars, or mix it with spices to create a simmering sauce for an Indian dish.
