Made with fermented chickpeas instead of the more traditional soybeans, this miso is sweet and milder than its counterparts. Miso is made with rice koji - cooked rice that has been injected with a fermentation culture -sort of miso’s version of yeast. Store in the refrigerator, it will last up to a year.
