Sfoglini is a Brooklyn based producer of small batch, freshly extruded pastas made from some of the finest organic flours produced locally in the Northeast. They use traditional Italian bronze dies which give their pasta a textured, porous surface and then air dry at low temperatures to preserve the most nutrition and flavor. They have also created a number of unique seasonal pastas using local ingredients (wheat from Wild Hive Farms) and spices from city gardens, breweries, wineries and distilleries, including a Bronx Brewery Spent Grain pasta, a Brooklyn Grange Basil pasta and a Red Hook Winery Sauvignon Blanc pasta.
