For vegan diet; mix 1 tsp. ground flax seeds with with 3 tsp. water in a small bowl and set aside.
Grate zucchinis on the large holes of a box grater. In a medium bowl toss zucchini with 1 tsp. of salt. Let sit for 10 minutes. Squeeze out the liquid. Mix with chives, flour, egg (or flax seed mixture for vegan diet). Heat oil in a large skillet on medium heat. Add spoonfuls of the mixture to the pan, flattening with a spatula. Cook the fritters over moderately high heat until the edges underneath are golden, about 3 to 4 minutes. Then carefully flip and cook 2-3 minutes on the other side.
Drain on paper towels and season with flaky salt and more minced chives. They are also wonderful served with simple garlic mayo or spicy mayo.
