Shaved Cantaloupe and Cucumber Salad

  • 1 Cucumber, halved crosswise, then halved lengthwise
  • ¼ Cantaloupe, rind removed
  • ½ cup Basil leaves
  • ½ Hot Pepper, thinly sliced
  • ¼ cup Nuts, toasted and chopped (optional)
  • 2 Tbsp White Wine Vinegar
  • 1 tsp  Raw Honey
  • 3 Tbsp Olive Oil
  • Sea Salt & Freshly ground Black Pepper

Whisk chopped nuts, pepper, vinegar and honey in a small bowl. Gradually stream in oil, whisking constantly until emulsified; generously season dressing with salt and pepper.


Using a mandoline, shave cucumber and cantaloupe lengthwise (or thinly slice with a knife). Place in a large bowl; add basil and nuts. Drizzle dressing over and toss gently to coat. Season once again with salt and pepper, to taste; and serve.
