Shakshuka Baked Peppers

Serves 2

Ingredients:

  • 2 Bell Peppers, cut in half, seeds and stems removed
  • 4 Eggs
  • 8 Tbsp. Shakshuka
  • 4 Tbsp. Teahive Cheese, grated
  • 2 Tbsp. Parsley, chopped
  • Salt and Pepper to taste
Preheat the oven to 375 degrees. Place the peppers on a baking sheet skin side down. If necessary, use a small tin foil nest to keep each piece upright and sturdy. Crack an egg into 1 half pepper and top with 2 Tbsp. Shakshuka and 1 Tbsp. cheese. Season with a pinch of salt and pepper. Repeat with the remaining peppers and eggs. Place in the oven for 15-20 minutes, until the yolk is set to your liking. Garnish with the parsley and divide between 2 plates.
