Preheat oven to 425 degrees. Place potatoes on a large baking sheet, drizzle with 1 tablespoon of olive oil and sprinkle with sea salt. Toss with your hands to coat. Spread across sheet and roast for 20 minutes.
Slice sausage into 4-inch sections. Tear kale into bite-size pieces.
When potatoes have been in oven for 20 minutes, stir them gently with a spatula and flip them over. Add sausage to pan.
Roast for another 10 minutes; then remove from oven and add kale. Spread everything out evenly and roast for another 10 minutes. Potatoes should be slightly crisp, sausage should be plump and juicy, and kale should be crispy.
