Preheat oven to 350. Peel the potato, apple and kohlrabi. Slice one quarter inch thick using a mandolin, if possible. Grease a baking dish with butter; then grate the Everton cheese. Season the sliced vegetables with salt and extra virgin olive oil. Layer the vegetables in the greased baking dish, alternating in threes with cheese sprinkled generously in between each layer. Use any remaining cheese to coat the top of the gratin. Bake until the vegetables are tender (approximately 45 minutes).
