Fingerling Potatoes with Raclette

Prep Time: 40 minutes

Serves 4

Ingredients:
  • 1 pound Fingerling Potatoes, cut into quarters
  • 4 ounces Raclette Cheese, sliced thinly
  • 1 Tbsp. Thyme leaves
  • 1/2 Tbsp. Olive Oil
  • Salt and Pepper to taste
  • Cornichons (optional)
Preheat the oven to 400 degrees. Toss together the potatoes, thyme and olive oil. Season with a pinch of salt and pepper and roast for 30-35 minutes. Cover with the raclette and return to the oven until the cheese is completely melted, about 10 minutes. Season with salt and pepper to taste and garnish with cornichons.
