Prep Time: 45 minutes (plus time for the beans to soak)
Preheat the oven to 400 degrees. Bring a large pot of salted water to a boil over a high flame. Add the butter beans and stir. Reduce to a simmer and cook until tender, about 15-20 minutes. While the beans are cooking, in a separate pan, combine the tomatoes, garlic and thyme along with 1 Tbsp. olive oil and a pinch of salt. Place into the oven and roast until slightly browned, stirring once, about 25 minutes. Remove from the oven and set aside.Strain the beans and place them into a large mixing bowl. Add the remaining olive oil, vinegar and the tomato-garlic-thyme mixture along with a pinch of salt and pepper, to taste. Stir until just combined.
