Leaf lard is the highest grade of lard or rendered pork fat. It comes from the visceral fat around the kidneys and loin of the pig. And because it lacks any pork or meaty flavor at all, it makes for an excellent neutral-flavored cooking fat with a high smoking point.
Leaf lard is fantastic for baking, especially in producing moist, flaky pie crusts.
