Sambal is to Malaysians what ketchup is to Americans, but give this a try and you will be smearing it on everything from meat to fish and sandwiches to noodles. The word "sambal" refers to a condiment of ground spices and aromatics, with the key ingredient being fresh red chillies that is served either cooked or raw. Auria's Malaysian Kitchen's Hot Chilli Sambal is a delicious hot cooked sambal featuring the distinct umami of dried shrimp. It is made from a family recipe the way Auria's mother made it in her kitchen.
