This is a play on the Finocchiona salami. The folks at Chop Butchery love fennel and wanted to showcase it. Instead of just using fennel, they also crush anise seed and combine it with white and black pepper to create a full flavored salami that will linger in your mouth. Slightly spicy and herbal, it's perfect with hard cheeses and a dry wine.
